Adam’s notes include candied almonds, fennel, early season raspberries, light smoke, walnut oil, dusty mince pies, damp coffee grounds, strawberry balsamic, oatmeal protein bars and dark chocolate ganache.

Westland

Westland is one of the defining names in American single malt, rooted not in imitation of Scotland, but in the grain, climate, and brewing culture of the Pacific Northwest. Founded in Seattle in 2010, it set out to make malt whiskey with a strong sense of place, drawing heavily on Washington barley and the region’s long familiarity with craft brewing. Rémy Cointreau acquired Westland in 2017, though the distillery has continued to emphasise local agriculture and American single malt as its central cause.

Its production philosophy begins with malt. Westland has used a wider range of malted barley than many whisky distilleries, including roasted and specialty malts more familiar to brewers. The result is a house style with depth from the grain itself, rather than relying entirely on cask influence. Maturation commonly involves new American oak, first-fill bourbon casks, sherry wood, and more distinctive regional experiments. The Garryana series, using native Pacific Northwest Garry oak, is perhaps its clearest statement of local intent.

There is a pleasing confidence to Westland’s work. It is neither Scotch in disguise nor bourbon wearing a malted hat. Its whiskies often show dark malt, cocoa, orchard fruit, spice, and a firm oak structure, while peated expressions add smoke without abandoning the distillery’s grain-led identity. In a relatively young category, Westland has helped argue that American single malt can be more than a curiosity: it can be a serious regional style with its own language.
