This wine is initially matured to become a Manzanilla and then “oxidatively” aged in oak “butts” to become an Amontillado with dry, amber coloured and well aged wine with a full nutty aroma and a very long on the palate. Full, dry and smooth with a rich, nutty and penetrating aroma best presented in a wine glass, served at room temperature as an aperitif or enjoyed with cured delicacies, cheeses or soups.
