Matured in ex-bourbon casks and finished in Cream Casks — with just 6254 bottles for the world this non-chill-filtered malt, bottled at 48% ABV with no additives, delivers tropical sweetness, warm spice, and creamy richness.

The Paul John Christmas Edition 2025 with a deep amber hue offers rich, inviting aromas that lead to a palate layered with flavor’s of fruit, caramel and roasted nuts with a long, elegant finish.

Nose: Ripe plum, dark cherry, candied orange peel, and orange blossom honey, complemented by soft toffee, cocoa, and nutmeg.
Palate: A refined balance of apple, stone fruits, caramel, roasted nuts, and tropical sweetness, enhanced by notes of spiced rum, butterscotch, and dark caramel.
Finish: Long and creamy, with lingering tones of sweet oak, molasses, dried berries, and a subtle hint of Christmas cake — a fitting tribute to the season’s spirit.

When one thinks of Goa, images of palm-fringed beaches and the lingering aroma of spice-laden markets come quickly to mind. Yet tucked behind this postcard paradise lies an altogether different treasure: a distillery that has, in remarkably short order, placed India upon the map of serious single malt production. Paul John was founded in 1992 by John Distilleries, initially a broad spirits enterprise, but it was in the early years of the 21st century that the idea of crafting a premium Indian single malt took firm hold. By 2008, the distillery had begun its whisky experiments in earnest, and in 2012 the first bottlings reached international shores to great acclaim.

The location itself provides both challenge and advantage. Goa’s sultry climate hastens maturation, encouraging a rapid conversation between spirit and oak. This tropical influence produces whiskies with a depth of colour and intensity of flavour well beyond their years, though it does mean that casks surrender a greater share of their contents to the angels than one might expect in Scotland. Barley is sourced from the plains of Rajasthan and Haryana, with both unpeated and peated styles produced, the latter using imported Scottish peat for drying.

Production follows a classic template but with intriguing variations: copper pot stills crafted in India, long fermentations that coax out fruity esters, and careful cask management including bourbon barrels, sherry casks, and occasional experiments with port pipes. The resulting house style is generous and expressive, often marked by honeyed malt, tropical fruit, spice, and in the peated expressions, a distinctly maritime smokiness that nods to Islay while retaining its own Indian character. Paul John, then, is not a curiosity, but a genuine force in the world of whisky, demonstrating how tradition and innovation can harmonise in unexpected corners of the globe.
