As Dr Bill, our freethinking Director of Whisky Creation, enjoyed a cup of his favourite Jamaican Blue Mountain coffee, the notion of Signet first came to him. At once his mind filled with spiralling mocha flavours that he could not forget.

It would take him years to bring our unprecedented whisky to life. But in its tiramisu tones and melting chocolate, you can taste his most delicious imaginings.

Signet begins with our precious chocolate malt spirit, made just once a year in our giraffe-high stills. Its espresso-like intensity fills our Distillery with aromas more familiar in an Italian coffee bar.

Over the years, we temper its power with rare and treasured casks. Bourbon for creaminess. Sherry for sweetness. The spice of virgin charred oak. All balanced by some of the oldest whisky we own.

The result? A velvet explosion of flavour. Bursts of bitter mocha, sizzling spice and waves of dark chocolate, mellowed by smooth butterscotch. Whisky, as you have never tasted it before.

Glenmorangie

Height comes first at Glenmorangie. The copper stills are famously lofty, their elegant necks encouraging only the lightest vapours to rise and condense. That soaring geometry shapes a spirit of poise and lift, the kind that welcomes nuance from cask rather than bludgeoning it. Water arrives from the Tarlogie Springs above the distillery, hard and mineral by Highland standards, a quiet signature that threads through the new make and into the glass.

The story begins in 1843 when William Matheson set up operations on Morangie Farm at Tain, on the northern shore of the Dornoch Firth. Across wars, closures, and revivals, the distillery became a touchstone of modern Scotch, its reputation carried by a small coastal town whose name is now known in every bar. Ownership today rests with LVMH, a partnership that has married deep pockets to a long view, investing in capacity, cask stock, and the landscape that feeds the springs.

Production balances precision with curiosity. Fermentations are managed for clarity, the tall stills run deliberately to preserve fruit and floral notes, and wood policy borders on obsessive. The team favours tight-grained American oak that has been air dried, seasoned, and tracked from forest to warehouse. Secondary maturation is used not as decoration but as dialect, giving the spirit different accents without drowning its voice. The result is a house style that reads as citrus, honey, almond and silk, with the Dornoch air somewhere behind it, and the shimmer of those tall stills in every sip.
