Aged for about 15 years in a combination of Oloroso Sherry and bourbon-seasoned casks, and then finished for about 9 months in port wine pipes (large barrels unique to making port wine.) This single malt shows its layers of flavor, juicy fruits, nuts and spice, as well as a hint of ruby redness.

Old Bushmills

There are few distilleries that can claim a lineage as frequently invoked, and as often misunderstood, as Old Bushmills Distillery. The oft-cited date of 1608 refers to a licence granted to distil in the area, rather than to the founding of the present distillery itself, which was formally established in 1784. What matters more than the exactness of dates is continuity of intent, for Bushmills has long been associated with a particular Irish style, one centred on malted barley and a notably refined distillate.

Set in County Antrim, a short distance from the Giant’s Causeway, the distillery draws its water from the River Bush, which flows over beds of basalt before reaching the site. The surrounding landscape is windswept and coastal, though less overtly rugged than parts of Scotland’s western seaboard, lending a quieter backdrop to production. Over time, Bushmills has endured fires, closures, and changes in ownership, yet has retained a sense of identity anchored in its use of malt and its position within Irish whiskey’s evolving history.

Production at Bushmills has long diverged from the more widely recognised Irish single pot still tradition. Instead, it focuses on 100% malted barley for its single malts, triple-distilled in copper pot stills to produce a spirit of notable lightness and clarity. Fermentation is relatively long, encouraging delicate fruit notes, while maturation typically takes place in a combination of ex-bourbon and fortified wine casks, including sherry and, in more recent releases, port and Madeira. The result is a house style that favours elegance over weight, with a gentle sweetness and a measured, almost architectural balance, shaped as much by careful distillation as by time in wood.
