A new spirit emerges from the depths below… Driftwood has unveiled an epic sequel to the widely acclaimed Devine Spirit of the Deep. Just like the original, this rare and distinctive creation has been crafted in BC specifically for the Fathom bar at The Hotel Grand Pacific. Only 18 bottles of this second batch are available at retail. 

This debut whisky release from the award-winning brewers and distillers at Driftwood is a collaboration between The Strath’s Adam Bradshaw and Driftwood’s incredibly talented master distiller Pablo Cartes. This spirit needed to be bold enough to stand up to Fathom’s creative cocktail programme, led by Soren Schepkowski – especially their ever-popular Fathom Old Fashioned. With this in mind, they produced a single-cask expression designed to capture the original Spirit of the Deep’s dark, complex spice – but in an entirely unprecedented way.

The journey began with a cask of some of the earliest single malt spirit laid down by Driftwood in 2021, matured in ex-bourbon white oak. To this was added a whisper of extra depth using Canadian whisky’s signature 1/11th rule: an infusion of a very small measure of Driftwood’s own cask-strength, barrel-aged nocino. This traditional Italian liqueur, crafted from green walnuts, bursts with baking spice. Next, to make it a distinctly Victorian expression, the whisky rested for several months in a cask that once held Driftwood’s iconic Singularity imperial stout. This final stage softened and integrated the flavours, while adding decadent notes of cocoa and dark-roasted coffee. In the spirit of both creativity and connoisseurship, the whisky is released at full cask strength – unchillfiltered, uncoloured, and uncompromising.
