We found an immediately classical and comforting profile full of pink antiseptic cream, gelatinous peaty notes and medicinal qualities such as gauze, mercurochrome and bandages. We also found it to be highly coastal and precise, with seawater and pickling brine. Reduction suggested to us aniseed distillate, a very thick peat smoke, cider apple, a hay loft and iodine. We also felt this one displayed a maturity beyond its years.

The palate neat was superbly creamy, thick and peaty, with lovely typical flavours of iodine, phenols, kelp, soy sauce and salt-cured fish. With water it displayed a wonderful roundness in the mouth, with notes of dental mouth gel, tar extracts, pine wood smoke, salty pasta water and umami seasonings. A wonderful example!
